CHILI CON CARNE 
1 lb. red, pink, or pinto beans, washed and drained
6 c. water
1/3 c. chopped beef suet or enough bacon fat to brown next 2 ingredients
2 onions, chopped
1 garlic clove, minced
2 lbs. lean ground beef
3 tsp. salt
1/4 tsp. pepper
1 to 3 tsp. chili powder
1/4 tsp. crushed red pepper
1 tsp. paprika
4 c. tomato juice

Cover beans with the water, bring to boil, and boil for 2 minutes. Let stand for 1 hour. Cover and simmer until tender, about 2 hours.

Render beef fat (or bacon fat) in skillet, add onions and garlic, and cook until golden. Add meat; cook until meat separates and browns, stirring with fork. Add with remaining ingredients to beans. Simmer, uncovered, for about 1 1/2 hours, stirring occasionally. Serves 8.
