SWIMMING POOL SHRIMP - CHARCOAL
GRILLED
 
1 1/2 lbs. large raw shrimp, peeled and deveined (about 2 lbs. in their shell)
1 c. olive oil
1/4 c. lemon juice
1/2 c. onion, finely chopped
3 shallots, finely chopped
2 garlic cloves, minced
1/4 c. finely snipped parsley

Combine olive oil, lemon juice, shallots, garlic, parsley and onions. marinate the shrimp in mixture in the refrigerator for several hours. Drain shrimp. Place on aluminum foil over medium hot coals for about 6 to 8 minutes on each side. Serve hot.

To make super appetizers use small shrimp. Serves 8 to 10. Preparation time 10 to 15 minutes.
