BROCCOLI, CRANBERRY AND BACON
SALAD
 
This is pretty great and gets better with age. I just gauge amounts till "it looks right". These are estimates as everyone favors certain ingredients.

2 bunches fresh broccoli
1 pkg. dried cranberries
1/2 to 1 cup pecans, broken
1/2 cup red onion
1 can water chestnuts, drained and sliced
1 cup sharp cheddar cheese, grated
1/2 lb. bacon (8 to 10 slices)
1/2 cup sunflower kernels
grape tomatoes (4 for each serving)
4 to 6 oz. Italian dressing
1 cup red seedless grapes, sliced in half (if desired)

Clean broccoli, cut to bite size, blanch and place in large bowl. Add one package dried cranberries. Break up pecans and add (sometimes I toast in oven for deeper flavor). Chop or slice red onion into rings and add. Drain water chestnuts and add.

Fry bacon crisp, cool and drain. Break into bite size pieces and add. Grate cheese or crumble and add. Add sunflower kernels to taste. Add grape tomatoes. Mix all together. Use enough Italian Dressing to coat. Enjoy!
