“RIGATONI WITH MOM'S SECRET MEAT SAUCE” IS IN:

RIGATONI WITH MOM'S SECRET MEAT
SAUCE
 
1-1/2 lbs. ground beef round
1 medium yellow onion, chopped
1 quart canned tomatoes, crushed (include juice)
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon sugar
1 tablespoon dried basil leaves
1/4 cup grated Parmesan-Romano cheese (plus more for topping)
1/4 teaspoon crushed red pepper flakes
1 (12 oz.) can tomato paste
1 tablespoon instant coffee dissolved in 1 cup warm water
1 cup heavy cream
16 oz. rigatoni noodles, cooked and drained

In a large pot, brown meat. Drain if necessary.

Add onions to meat and cook, stirring 1 minute. Add tomatoes, salt, pepper, sugar, basil, 1/4 cup grated Parmesan-Romano cheese, red pepper flakes, tomato paste, and coffee water.

Simmer over low flame, uncovered, 30 minutes, stirring occasionally.

Stir in cream and simmer 5 minutes more.

Spoon sauce over rigatoni and serve with plenty of grated Parmesan-Romano cheese.
