CARROT COOKIES WITH ORANGE GLAZE 
2 3/4 c. flour
1 tbsp. baking powder
1 c. butter
1 c. sugar
2 eggs
1 (7 1/2 oz.) jar junior carrots (baby food)
1 tsp. vanilla
1 tsp. lemon extract

On large sheet of waxed paper stir together flour and baking powder; set aside. In large saucepan, melt butter over very low heat. Remove from heat; stir in sugar, eggs, carrots, and extracts until smooth. Gradually stir in flour mixture until smooth, soft dough forms. (Reserve waxed paper.) Cover tight; refrigerate at least 1 hour or up to 3 days before baking in preheated 375 degree oven for 10 to 12 minutes or until slightly firm and edges are golden brown. Let cool 1 minute on sheet; remove to racks. Set over waxed paper. While still warm, glaze with 1/2 teaspoon orange glaze. Makes 96.

ORANGE GLAZE:

1/4 c. orange juice
1 1/2 tbsp. orange peel
2 1/2 to 3 c. powdered sugar

In medium bowl combine orange juice and orange peel. Add powdered sugar until thick and smooth. Makes 1 cup.
