CARROT - ZUCCHINI BREAD 
1 c. whole wheat flour
3/4 c. all purpose flour
3/4 tsp. baking soda
3/4 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. salt
1/4 c. vegetable oil
3/4 c. sugar
1 c. skim milk
1 egg
1/2 c. carrot, shredded
1/2 c. zucchini, shredded

Preheat oven to 375 degrees. Spray loaf pan with cooking spray. Stir together flours, baking soda, cinnamon, ginger, and salt. In large bowl, beat oil, sugar, milk, and egg. Add dry ingredients. Fold in carrot and zucchini. Pour batter into loaf pan and bake for 45-50 minutes. Cool and remove from pan. Cut into slices.
