CARROT - ZUCCHINI BREAD | |
3 c. flour 1 1/2 c. sugar 1 c. chopped walnuts 4 1/2 tsp. baking powder 1 tbsp. grated orange peel 1 tsp. ground cinnamon 1/2 tsp. salt 1/4 tsp. ground ginger 4 lg. eggs 2/3 c. oil 1 med. zucchini, grated (about 1 c.) 3 med. carrots, grated (about 1 c.) Grease and flour two (8 1/2 x 4 1/2 x 2 1/2) loaf pans. In large bowl stir flour, sugar, walnuts, baking powder, orange peel, cinnamon, salt, and ginger to mix well. In medium bowl using wire whisk or fork beat eggs and oil lightly; stir in zucchini and carrots. Stir egg mixture into flour mixture until just moistened. Pour into prepared pans. Bake at 350 degrees 1 hour or until wooden pick inserted in center comes out clean. Cool in pans on wire rack 10 minutes; remove from pans and cool completely. |
