APPLESAUCE BEEF LOAF 
1 egg, beaten
1 1/2 c. soft bread crumbs (2 slices bread)
1/2 c. applesauce
1/4 c. celery, finely chopped
2 tbsp. onion, finely chopped
1 tsp. Dijon-style mustard
1/2 tsp. salt & dash of pepper
1 lb. ground beef

Combine egg, bread crumbs, applesauce, celery, onion, mustard, salt and pepper. Add 1 pound ground beef and mix thoroughly. Shape mixture into a round loaf in an 8 x 8 x 2 inch baking pan. With a spoon, make a crater like depression in top of the loaf. Combine 1/2 cup applesauce, 1 tablespoon brown sugar, 1 1/2 teaspoons vinegar and 1/2 teaspoon Dijon-style mustard. Pour into depression. Bake at 350 degrees for 1 hour. Serves 4 or 5.
