ZUCCHINI BREAD 
3 eggs, beat until foamy
1 c. oil
1 c. sugar
1 c. brown sugar
3 tsp. vanilla
2 c. unpeeled & grated zucchini
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
3 tsp. cinnamon
1 c. nuts

Beat eggs, oil, sugar, brown sugar and vanilla together. Add grated zucchini squash. Add remaining sifted ingredients. Mix. Add finely chopped nuts. Bake 1 hour at 325 degrees. Makes 3 medium loaves.
