ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated, peeled zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
3 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1 c. chopped nuts (optional)

Mix first 5 ingredients in medium bowl. Set aside. Measure flour by dip level method, then add salt, cinnamon, soda and baking powder. Add flour mixture to zucchini mixture. Stir until well blended. Add chopped nuts, if desired. Pour into 2 loaf pans and bake 1 hour at 350 degrees. Cool on rack. Bread can be frozen after it has cooled. Wrap in Saran Wrap, then tinfoil.
