PRIZE PEACH COFFEE CAKE 
BATTER:

Mix thoroughly: 1 Texas egg 1/4 c. soft shortening

Stir into the preceding 1/2 cup milk. Sift together and stir in: 1/2 tsp. salt 2 tsp. baking powder

Spread batter into a greased and floured 9" square pan. Top with 2 cups fresh sliced Texas peaches and sprinkle with crumble mixture.

CRUMBLE MIXTURE:

1/2 c. sugar
1/2 tsp. cinnamon
1/3 c. flour
1/4 c. soft butter

Bake Coffee Cake at 375 degrees for 40 to 45 minutes.

Glazed Peaches: Top Texas peach or pear halves, rounded sides up, with melted currant jelly.

Peaches Deluxe: In each chilled, peeled Texas peach half, place spoonful of brandy; drizzle on honey; top with whipped cream.
