LEMON COCONUT BARS 
3/4 c. butter
1/2 c. powdered sugar
2 c. flour
1 tsp. vanilla
4 eggs
2 c. sugar
6 tbsp. lemon juice
Grated rind of lemon
1 c. coconut (opt.)
1/3 c. slivered almonds (opt.)

Heat oven to 350 degrees. Grease 9 x 13 inch pan. Combine butter, powdered sugar, flour and vanilla. Pat into baking pan. Bake 15 minutes. Remove from oven.

Combine eggs, sugar, lemon juice and rind. Pour over crust. Sprinkle coconut and nuts on top. Return to oven. Bake additional 18 to 22 minutes.
