COLD ARTICHOKE RICE SALAD 
1 pkg. chicken flavored Rice-A-Roni
4 thinly sliced green onions (optional)
1/2 green pepper, chopped
12 pimiento olives, sliced
2 (6 oz.) jars marinated artichoke hearts
3/4 tsp. curry powder
1/3 c. mayonnaise

Cook entire box of rice according to directions, omitting the first step using butter. Cool rice in a large bowl. Add rice to onions, green peppers and olives. Drain artichokes and reserve the marinade. Slice artichokes and add to rice. Combine marinade with curry powder and mayonnaise. Pour over rice mixture and toss thoroughly. Chill until served. This may be made a day ahead. Yield: 4 to 6 servings.

Chopped, cooked chicken can be added to this mixture to make a delicious meat salad.
