NATCHEZ TRACE CRACKLING BREAD 
2 c. corn meal
1 tsp. salt
3 tsp. baking powder
1/2 c. milk
1/2 c. water
1 egg
1/2 c. cracklings (can use the toasted but omit the salt)

Mix ingredients. Beat until smooth. Stir in cracklings; bake in an iron skillet for 30 minutes in hot oven at 425 degrees.
