RICE STUFFED STEAK 
1/4 c. flour
2 tsp. salt
1/2 tsp. pepper
1/4 lb. sausage
1/2 c. minced onion
2 c. cooked rice
1/4 c. shortening
1 1/2 to 2 lbs. round steak

Mix together flour, salt and pepper. Pound into meat, use it all please. Mix sausage, onions, and rice. Spread over meat to within 1 inch of edge. Roll up meat lengthwise. Fasten with toothpicks or strings. Brown meat in shortening. Cover tightly. Cook slowly 1 1/2 to 2 hours until meat is fork tender. Place meat with open edge down on platter. Slice.
