LENTIL SOUP 
2 c. dry lentils, washed
4 c. water
3 carrots, diced
1 sm. onion, chopped
1 tsp. salt
1 tsp. crushed garlic
1 tsp. oregano
2 tbsp. corn or olive oil
1 tsp. pepper
1 c. rice

Combine the lentils with water and add the next 7 ingredients. Bring to a boil and return to a simmer. Cook for 1 1/2 hours covered. Add 1/2 cup of boiling water occasionally to maintain original amount of soup. Boil 1 cup of rice in water until cooked. Drain. Put rice in cooked soup, amount as desired. Bring to a boil and serve hot. Serves 4.
