RHUBARB PEANUT BUTTER COOKIES 
2 c. cooked rhubarb, sweetened (1/4 c. sugar)
1 c. butter
1 c. white sugar
1 c. brown sugar
1/2 c. peanut butter
2 eggs
3 c. flour
1 tsp. baking soda
1 tsp. vanilla

Cream butter and sugars, add peanut butter and eggs. Then add soda to flour and combine with sugar mixture. Add rhubarb and vanilla. Drop by teaspoonfuls on greased cookie sheet. Bake in 369 degree oven for about 15 minutes.
