BRUNCH EGG CASSEROLE 
2 c. plain or seasoned croutons
1 c. shredded Cheddar cheese
4 beaten eggs
2 c. milk
1/2 tsp. salt
1/2 tsp. prepared mustard
1/8 tsp. onion powder
Dash of pepper
4 slices bacon (or use sausage or mushrooms)

In bottom of greased 10 x 6 x 1 3/4 inch baking dish combine croutons and cheese. Combine eggs, slightly beaten with milk, salt, mustard, onion powder and pepper. Pour over crouton mixture. Cook bacon until crisp, drain and crumble over top of casserole. Bake at 325 degrees for 55-60 minutes or until eggs are set. Serve at once. Serves 6.
