RHUBARB NUT BREAD 
1 1/2 c. firmly packed brown sugar
2/3 c. vegetable oil
1 egg
1 c. buttermilk
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. diced rhubarb
1/2 c. chopped walnuts

TOPPING:

1/2 c. sugar
1/2 tsp. cinnamon
1 tbsp. softened butter

In large bowl combine brown sugar, oil, egg, buttermilk, salt, soda, vanilla and flour. Add rhubarb and nuts. Pour into greased and floured loaf pan, 9 x 5 inches. Bake at 350 degrees for 1 hour.
