RHUBARB NUT BREAD 
1 1/2 c. packed brown sugar
2/3 c. vegetable oil
1 egg
1 c. buttermilk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. diced rhubarb
1/2 c. nuts
1/3 c. sugar

Stir together first 7 ingredients, add flour, then fold in diced rhubarb, then nuts. Put in two loaf pans (8 x 4 x 3 inches). Sprinkle with 1/3 cup sugar. Bake at 325 degrees for 45 to 60 minutes. Test for doneness.
