TOM'S EGGPLANT PARMESAN | |
1 medium eggplant garlic powder or minced garlic 1/4 tsp. thyme 1/4 tsp. oregano 1/2 cup (1 stick) butter (or more for a larger eggplant) grated Parmesan cheese, for sprinkling Peel eggplant and slice into approx 1/2-inch thick slices. Mix spices and butter, melt in microwave or stove-top. Arrange eggplant slices on flat baking sheet - something with raised side is best. Coat up-side of eggplant with butter/spices mixture. Sprinkle Parmesan cheese on top of coated eggplant slices. Bake uncovered at 400°F for approximately 35 minutes. Submitted by: Tom Wright |
