CHICKEN TRAVATORE | |
1 (3 lb.) chicken or chicken breasts 1 tsp. salt 1/4 tsp. pepper 1/3 c. flour 5 tbsp. olive oil 1/4 c. ham, cubed 2 cloves garlic, minced 1/2 c. dry white wine 2 green peppers, cut in rings 1 c. sliced fresh mushrooms 2 medium onions, chopped 1 zucchini, sliced 1/2 tsp. dried marjoram 1 tbsp. chopped parsley 1 (1 lb.) can tomatoes Sprinkle chicken with flour, salt, and pepper; brown. Cook 15-20 minutes. Remove and brown ham. Remove and drain. Stir in garlic and wine; cook until wine is reduced by half. Add remaining ingredients and simmer 8-10 minutes. Add chicken and ham; stir to blend. Cook until heated throughout. |
