BARBECUED CHICKEN 
Wash and dry cut up or quartered fryer. Coat by shaking in a bag of flour. Melt 1/4 cup fate (half butter) in baking pan in oven 425 degrees (hot). Place chicken in pan in single layer, skin side down. Bake 45 minutes. Pour off fat and turn. Spoon hot Barbecue Sauce (below) over chicken and bake at 375 degrees (quick moderate) 30-45 minutes or until tender. Baste with sauce during baking.

BARBECUE SAUCE:

1 tsp. salt
1/2 tsp. pepper
1 tbsp. paprika
1 tsp. sugar
1 med. onion, finely chopped
1 c. tomato puree or catsup
1/4 c. butter
1/2 c. hot water
1/3 c. lemon juice
1 tbsp. Worcestershire sauce

Mix all above ingredients in saucepan. Heat to boil and remove from heat.
