BARBECUED TURKEY WITH RICE 
1 tbsp. vegetable oil
1 med. onion, sliced in thin strips
1 lg. red bell pepper, sliced in thin strips
1/4 c. bottle barbecue sauce
3 tbsp. jellied cranberry sauce
2 tbsp. tomato catsup
2 c. bite-size strips cooked turkey

Heat oil in large skillet over medium-high heat. Add onion and pepper strips, stirring occasionally for 3 minutes or until crisp-tender. Add barbecue sauce, cranberry sauce and catsup. Stir until cranberry sauce melts. Add turkey and cook, stirring occasionally (about 7 minutes) or until sauce has thickened and coats turkey. Serve over rice.
