COCONUT PIE (BUTTERMILK) 
1 (9") unbaked pie crust
3 eggs
1 sm. can Baker's coconut
2/3 c. buttermilk
1 tsp. vanilla
2 c. sugar
Pinch salt
1 stick butter, melted

Beat eggs and sugar together, add buttermilk, butter, salt and vanilla. Add coconut and pour in pie crust. Bake at 350 degrees for 35 to 40 minutes.

Great pie and so easy...I always cook my frozen pie crust about 8 mom before filling and I had to cook this pie longer than the directions (50 min) but it came out great. I like it better than the ones that call for flour.
