BUTTERMILK-COCONUT PIE 
3 large eggs, lightly beaten
1 1/2 c. sugar
1/2 c. flaked coconut
1/2 c. buttermilk
1/2 c. melted butter
2 tbsp. all-purpose flour
1 tsp. vanilla
1 unbaked (9-inch) deep-dish pastry shell

Combine first 7 ingredients. Pour into pastry shell.

Bake at 350°F for 45 minutes, shielding with aluminum foil after 25 minutes.
