CHOCOLATE CHIP & ORANGE MUFFINS 
3/4 c. milk
1/2 c. vegetable oil
1 egg, beaten to blend
1 tsp. vanilla
1/3 c. brown sugar, firmly packed
2 tbsp. grated orange peel
2 c. flour
1 tbsp. baking powder
1 tsp. salt
2/3 c. semi-sweet chocolate chips

Preheat oven to 400 degrees. Combine milk, oil, egg and vanilla in bowl. In separate bowl combine flour, sugar, baking powder and salt. Stir into liquid ingredients. Fold in chocolate chips and orange peel. Divide batter into greased or paper lined muffin cups. Bake 20 minutes approximately until toothpick in center comes out clean. Let stand 5 minutes. Remove from tins. Cool on racks.
