CHOOSE - A - FRUIT - OR -
VEGETABLE BREAD
 
1 c. flour
1/2 c. wheat flour
1/3 c. quick cooking oatmeal
1 tsp. baking soda
1/2 c. butter
1/2 c. sugar
2 eggs
2 tbsp. milk
1 tsp. vanilla
1/2 tsp. finely shredded lemon peel
1 c. finely shredded zucchini, carrots, or peeled pears, or finely chopped
peeled peaches
1/2 c. chopped walnuts

Combine flours, oats, and soda; set aside. In a large mixer bowl, beat butter on medium speed for 30 seconds. Add sugar; beat until fluffy. Add eggs, milk, vanilla, and lemon peel; beat well. Stir in vegetable or fruit. Add flour mixture, a third at a time, beating on low speed until combined. Stir in walnuts.

Spread batter in a greased 8 x 4 x 2 inch loaf pan. Bake at 350 degrees for 55 to 60 minutes. Cover with foil the last 10 minutes of baking. Cool 10 minutes. Remove from pan; cool on wire rack. Wrap and store overnight for easier slicing. Makes 1 loaf, 12 servings.
