ZUCCHINI BREAD 
3 eggs
1 c. oil (flower oil)
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 c. zucchini, grated
2 c. sugar
3 c. flour
1/4 tsp. baking powder
1 1/4 c. walnuts, chopped
2 tsp. vanilla

Beat eggs with sugar until smooth. Slowly add oil. Sift flour, salt, cinnamon, baking powder and baking soda together. Add vanilla to eggs and sugar. In threes, fold in the sifted dry ingredients. Then fold in walnuts and zucchini. Bake at 325 degrees. Bread requires 1 hour, muffins from 30 to 45 minutes depending on their size.
