BEEF ENCHILADA STACK - UP 
3 (7 to 8 inch) flour tortillas
1/2 lb. ground beef
1 sm. onion, chopped
1 clove garlic, minced
1/3 c. + 2 tbsp. Pace picante sauce
1/2 tsp. ground cumin
1/4 tsp. salt
1 med. tomato, seeded & chopped
1/4 c. sliced green onions with tops
3/4 c. shredded cheddar cheese
Dairy sour cream (optional)
Sliced ripe olives (optional)

Brown beef with onion and garlic. Drain. Stir in 1/3 cup sauce, cumin and salt. Simmer for 5 minutes, stirring occasionally. Stir in tomato and green onions. Place 1 tortilla on baking sheet. Top evenly with 1/2 meat mixture. Sprinkle with 1/4 cup cheese. Add second tortilla, remaining meat mixture and 1/4 cup cheese. Top with third tortilla. Sprinkle with remaining cheese and drizzle with 2 tablespoons sauce.

Bake at 350 degrees about 15 minutes or until heated through. Top with sour cream and olives if desired. Serve with additional picante sauce. Makes 2 servings.
