MOM'S SWEET POTATO SOUFFLE 
1 lg. can sweet potatoes (leave 1" of juice in can after draining)
1 heaping tbsp. brown sugar
2 eggs, beaten
1/4 c. canned evaporated milk
1/2 stick (1/4 c.) butter
Approx. 8-10 lg. marshmallows, or enough to cover potato mixture

Melt butter and sugar in a small saucepan. Put into large mixing bowl. Pour in canned sweet potatoes and 1 inch (approximately) of the juice and mash the potatoes. Beat the 2 eggs in separate bowl, then add to the potatoes along with the evaporated milk. Mix well with electric mixer until fairly smooth.
