JANET'S EASY APPLE CAKE 
1/2 cup (1 stick) butter
1 1/2 cups sugar
1 cup all-purpose flour
3/4 cup milk
1/4 tsp. ground ginger
pinch of nutmeg or mace (optional)
1/4 tsp. salt
1 1/2 tsp. baking powder
1 (20 oz) can apple filling plus liquid (I use Comstock)

CINNAMON SUGAR TOPPING:

1/2 cup sugar
1/2 tsp. ground cinnamon

Preheat oven to 350°F. Melt butter in 9x13-inch baking pan.

Combine remaining cake ingredients (except fruit) and beat together just until smooth (some lumps can remain).

Pour batter into pan without stirring. Add can of fruit with juice over the batter (don't stir in).

For topping, combine sugar with cinnamon and sprinkle over top; do not stir.

Bake in preheated 350°F oven for 30 to 45 minutes or until golden and center is set.

Note: Fresh apples may be used instead of canned.

I've made this recipe twice now, and I have to say it is AMAZING! The first time I made it with fresh apples and the second time I used Comstock. Both times it turned out fantastic! It was so easy to make too, and I will definitely be making it again. One thing that surprised me is how moist the cake was, even though I didn't use any extra water or liquid in the batter. I highly recommend this recipe to anyone who loves apples!
