SALMON PATTIES 
1 can Alaskan salmon
3 slices of bread
1/4 c. finely minced onion (opt.)
1/4 c. milk
2 eggs
1 tbsp. minced parsley
1 tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. dill weed
Dash pepper
Flour (opt.)
2 tbsp. vegetable oil

Drain salmon, reserving 2 tablespoons liquid; flake. Tear bread into small pieces. Combine all ingredients except flour and oil. Mix well. Shape into 6 patties. Coat with flour if desired. Pan fry on both sides in oil until golden brown. Makes 6 servings.
