SQUASH PATTIES 
1 c. all purpose flour
1 tsp. sugar
1/2 tsp. salt
3/4 c. milk
1 egg
1/4 c. vegetable oil
3 c. grated yellow squash
1 med. onion, chopped
2-3 tsp. crushed red pepper

Combine first 6 ingredients; beat with an electric mixer until smooth. Add remaining ingredients; stir well.

Drop mixture by tablespoons into a hot, greased skillet. Cook until golden brown, turning once. Drain on paper towels. Yields about 2 dozen.

Can be cooked and then frozen on cookie sheet and bagged when frozen.
