2 cups rice, cooked (your choice) 2 lb. ground beef chuck 1 onion, chopped 2 (15 oz. ea.) cans stewed tomatoes (Hunts) 1 (15 oz.) can Ranch style beans ground cumin, to taste chili powder, to taste salt, to taste black pepper, to taste TOPPINGS: Frito corn chips lettuce tomatoes grated cheddar cheese picante sauce Begin cooking rice in rice cooker (mine takes 45 minutes so I start it early). Meanwhile, chop onion and cook with ground beef. Once meat start browning add chili powder, salt, black pepper and ground cumin. Once done drain meat and add stewed tomatoes and cook on low/medium for about 30 minutes. Add beans and cook an additional 10 to 15 minutes on low. Layer in this order: Fritos, rice, meat mixture, lettuce, tomatoes, cheese, picante sauce. Eat and enjoy! Submitted by: AKIVA |
