SUMMER FIESTA MEXICAN SALAD 
1 lb. ground beef
1 can kidney beans
1 med. onion, chopped
1 tomato, diced
1 med. green pepper, chopped
Shredded lettuce
Shredded cheddar cheese
Tortilla chips
Thousand Island dressing
Chili powder
Ground cumin
Garlic salt
Pepper & oil

Saute onion and green pepper in skillet with oil. Brown ground beef, remove and drain. Heat beans in skillet and add meat. Season to taste. Place lettuce on plate, add beef mixture on top, then cheese, tomatoes, "crunched" tortilla chips and Thousand Island dressing for a cool summer taste. Serve with chips and salsa. Ole!
