MOUSSAKKA 
3 c. eggplant, peeled and cubed
2 tsp. salt (optional)
6 oz. ground turkey
2 c. stewed or fresh tomatoes
1 c. onions, chopped
1/2 tsp. nutmeg
1/2 tsp. paprika
2 slices reduced-calorie bread (any type), made into crumbs
1 oz. reduced-calorie Swiss cheese (2 slices)

Sprinkle eggplant with salt and allow to stand 30 minutes or more. (This step is optional.) Wash and pat dry. Spray a large frying pan with a nonstick cooking spray. Saute meat, tomatoes, onions and spices for 5 minutes.

Place eggplant on the bottom of a 2 quart casserole dish which has been sprayed with a nonstick cooking spray. Cover with tomato and meat mixture. Microwave on High for 5 minutes covered. Remove cover and top with bread crumbs and cheese slices. Return to microwave and cook on High for 30 seconds. In conventional oven, bake in preheated oven at 350 degrees for 25 minutes. Divide evenly. Makes 2 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
