MEAT SAUCE FOR PASTA
4 tbsp. olive oil
1 onion, chopped
1 carrot, chopped fine
3 cloves garlic, minced
2 (28 oz.) cans ready cut peeled tomatoes (or whole, cut up yourself)
1 (6 oz.) can tomato paste
1 tsp. black pepper
1 tsp. sugar
1 lb. ground beef
1 tsp. thyme
10 fresh mushrooms, diced

Heat oil in a saucepan and lightly brown onion, carrot and garlic. Stir in tomatoes, tomato paste, pepper and sugar. Simmer gently for about 30 minutes.

In the meantime, brown ground beef in a skillet with a little oil (medium heat) and drain off fat. Add meat and thyme to tomato mixture. Cover and simmer at least 1/2 hour, stirring occasionally. Add mushrooms and cook another 20 minutes. Mix with cooked pasta and add Parmesan cheese to taste.
