CHICKEN BREAST ALA AKA | |
4 lg. boneless chicken breasts, cut in halves 1/2 tsp. salt (Mrs. Dash may be sub.) 1/2 tsp. black pepper 2 tbsp. olive oil 2 tbsp. butter 3 tbsp. chives or green onions 2 tbsp. brandy, optional 3 tbsp. chopped parsley 2 tsp. Dijon mustard 1/4 c. chicken broth Juice of 1/2 lemon 1. Place chicken breast halves between sheets of plastic wrap, pound slightly. Sprinkle with salt and pepper. 2. Heat olive oil and butter in large skillet. 3. Cook chicken over high heat for 3-4 minutes on each side. Transfer to serving platter. 4. Add chives-green onions, lemon juice and brandy. Whisking constantly. Add parsley and Dijon mustard and broth. Cook 15-20 seconds. 5. Stir sauce until smooth. Pour sauce over chicken. Serve immediately. |
