MIDDLE EAST TABBOULEH SALAD 
1/3 c. fine bulgar wheat
1/3 c. olive oil
Juice of 1 large lemon
1/2 tsp. salt
1/2 tsp. pepper
1/2 cucumber
1 med. tomato
2 green onions
3 c. finely chopped parsley

Put bulgar in a small bowl and add 2 to 3 tablespoons of water and stir. Chop tomatoes, onions and cucumber finely. Mix with parsley in a large bowl.

Add wet bulgar, olive oil, lemon juice, salt and pepper to the other ingredients in the large bowl. Mix thoroughly and place in the refrigerator for 10 to 15 minutes. Makes 4 servings. OPTIONAL: Can add 2 tablespoons of dry mint and 1 finely chopped lettuce leaf.
