TABOULEH SALAD WITH CHICKEN | |
1/3 c. bulgur wheat 1 c. cooked, cubed chicken 1 lg. tomato, peeled and cubed 1/2 c. chopped cucumber 1/2 c. snipped fresh parsley 2 tbsp. snipped fresh mint 2 tbsp. chopped onion 1/4 c. oil 1/4 c. lemon juice 1 clove garlic, minced 1/8 tsp. salt 1/4 tsp. pepper Place bulgur in a strainer. Rinse and drain well. In a medium bowl, combine the rinsed bulgur, chicken, tomato, cucumber, parsley, mint and onion. Set aside. In a small bowl or jar with tight-fitting lid, combine oil, lemon juice, garlic, salt and pepper. Shake well and pour over bulgur. Toss gently to coat. Refrigerate overnight. Toss again and serve. |
