BANANA AND BRAZIL NUT CAKE | |
2 lg. eggs (beaten) 4 oz. butter 10 oz. bananas (peeled weight) mashed with fork 2 oz. chopped Brazil nuts 1 tsp. vanilla 4 oz. flour 4 oz. sugar Cream butter and sugar. Add mashed bananas; mix well. Blend in eggs and vanilla (mixture will curdle). Add chopped nuts. Sift flour and blend in mixture slowly. Pour into greased cake pan or loaf pan. Bake at 350 degrees for 50-60 minutes. |
