BRAZIL MINCEMEAT COOKIES 
1 c. sifted all-purpose flour
1/4 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 c. soft shortening
1 c. granulated sugar
1 tbsp. light molasses
1 egg, unbeaten
1/2 c. prepared mincemeat
1 tsp. vanilla extract
1 c. uncooked rolled oats
1 c. chopped Brazil nuts

Start heating oven to 350 degrees. Sift flour, soda, baking powder, salt, cinnamon. Mix shortening, sugar, molasses, and egg until very light and fluffy. Mix in mincemeat, then flour mixture, vanilla, oats, nuts. Drop by level tablespoonfuls onto greased cookie sheet. Bake 10 to 12 minutes. Makes 6 dozen.
