TURKEY BROCCOLI CASSEROLE | |
4 oz. (3 c.) uncooked noodles 1 (10 oz.) pkg. frozen broccoli spears 2 tbsp. low calorie butter 2 tbsp. all purpose flour 1/2 tsp. salt substitute seasonings 1/4 tsp. dry mustard 1/8 tsp. black pepper 2 c. nonfat milk 1 c. low-fat cheddar cheese, shredded 3 c. turkey, cooked & diced 1. Cook noodles and broccoli as directed on the packages; drain. 2. Melt butter; stir in flour and seasonings. 3. Add milk slowly; cook, stirring constantly until thickened. 4. Remove from heat; add cheese and stir until melted. 5. Dice broccoli stems, leaves, keep whole flowerets whole. 6. Place noodles, broccoli stems and turkey in an 8"x8"x2" baking dish. 7. Pour cheese sauce over ingredients in baking dish. 8. Arrange broccoli flowerets on top, pressing them into sauce. 9. Bake, uncovered at 350 degrees for about 25 minutes or until bubbly. Yield: 6 (1 cup) servings. |
