ARTICHOKE SOLITARIO 
1/4 c. fresh parsley, chopped
6 tbsp. olive oil
1 1/2 tsp. salt
3 cloves garlic, chopped fine
1/4 tsp. ground black pepper
6 tbsp. Chablis wine
6 med. or lg. artichokes, cut top and bottom

Mix together all ingredients except artichokes. Pour mixture into each artichoke in equal measure. Place the artichokes into a large pot. Add water to cover artichokes 1/2 way. Cover pot. Use medium-low heat and bring to a boil. Reduce heat to lo and cook approximately for 1 hour. Remove and serve. Makes 4-6 servings.
