CHICKEN CASSEROLE 
6 whole chicken breasts, boil and cube into bite sizes
1 can water chestnuts, slice and cut in sm. bits
1 can cream of chicken soup
1 pt. sour cream
1 box Escort crackers, crushed
1 stick butter, melted

Line large casserole with half of crackers, dot with 1/2 stick melted butter. Spread mixture of chicken breast, chestnuts, soup and sour cream (these 4 ingredients should have been mixed together thoroughly). Top with other half of Escort crackers, then dribble other half stick melted butter on top. Bake 45 minutes at 300 degrees.

If making this dish in advance to be refrigerated overnight, increase cream of chicken soup and 1/2 can, making soup total 1 1/2 cans. Serves 10-12.
