GRIDDLE CAKES 
1 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
1 egg, well beaten
3/4 c. milk
3 tbsp. melted butter or other shortening

Sift flour once, measure, add baking powder, salt and sugar, and sift again. Combine egg and milk. Add to flour gradually, beating to a smooth batter. add shortening. Drop griddle cake batter. Add shortening. Drop cake batter from tip of tablespoon on hot, greased griddle. Bake, turning when browned on underside and puffed slightly on top. Makes 12 to 14.
