UPSIDE - DOWN ORANGE BISCUITS 
1/4 c. melted butter
1/2 c. orange juice
3/4 c. sugar
2 tsp. grated orange rind
2 2/3 c. sifted enriched flour
3 tsp. baking powder
3/4 tsp. salt
6 tbsp. butter
1 1/8 c. milk
1/2 tsp. cinnamon

Combine melted butter, orange juice, 1/2 cup sugar and orange rind; boil 2 minutes. Pour into greased round 9 inch baking pan. Sift together flour, baking powder and salt. With pastry blender cut 6 tablespoons butter into flour until coarse crumbs are formed. Add milk and stir with fork until soft dough is formed.

Knead 1/2 minute on lightly floured board. Roll out to 1/4 inch thickness. Brush with a little melted butter and sprinkle with 1/4 cup sugar and 1/2 teaspoon cinnamon. Roll as for a jelly roll. Cut in 1 inch slices; place, cut side down, over orange mixture. Bake in very hot oven (450 degrees) 20-25 minutes. Serves 6.
