LEMON BUTTERMILK PIE 
1 1/4 c. sugar
4 tbsp. butter
4 tbsp. flour
2 eggs
1 c. buttermilk
1 tbsp. lemon extract
Unbaked pie shell

Mix flour and sugar. Add to butter and cream mixture. Add beaten eggs. Cream well. In separate bowl, mix buttermilk and lemon extract. Pour into creamed mixture and whip until smooth. Pour into unbaked pie crust. Bake uncovered at 350 degrees for 1 hour. Check during last 15 minutes. Top should be lightly browned when done. "Tastes like coconut pie."
