BUTTERMILK COCONUT PIE 
1 1/2 c. sugar
1/2 c. melted butter
1/2 c. buttermilk
2 1/2 c. coconut
2 tbsp. flour
3 eggs
1 tsp. vanilla
9 inch pie shell, deep

Mix flour and sugar; add butter and cream together. Add egg, buttermilk and vanilla. Add 2/3 of the coconut. Pour into pie shell. Add rest of coconut on top. Bake 1 hour at 250 degrees.

EASY PIE CRUST:

Sift together:

1 1/4 c. flour
1/2 tsp. salt

Cut in:

1/2 c. shortening

Sprinkle over mixture:

3 to 4 tbsp. cold water

Toss lightly with fork until dough is moist enough to hold together. Form into ball. Roll out on floured pastry board. Fit in pie dish. Pour filling in and bake.
